If you can focus on the person and their answers, and listen intently, it will be easy to make follow up questions to what they said. Something they said may also remind you about a story from your own experience. You can then bring it up and it will stimulate more response from them.
Also, don't be afraid of brief pauses. Some people have the internal fear of "What if we run out of things to say?" Remember that the pause can be an opportunity to allow the other person to move the conversation forward or can give you time to reflect on what to say next. Eventually, a natural flow will build.
